Onion Soup

Ingredients
- 1/4 cup butter
- 4 large yellow onions, thinly sliced
- 1/2 teaspoon sugar
- 6 cups canned beef broth
- 1 teaspoon worcestershire sauce
- 1/2 teaspoon paprika
- Salt and Pepper to taste
- 1/4 cup freshly grated Parmesan cheese
- French bread, thinly sliced
Directions
- Heat butter in large saucepan over medium heat. Add onion and sugar and saute' until golden.
- Add broth, worcesteshire and paprika and bring to a boil.
- Reduce heat and simmer uncovered 15-20 minutes.
- Add salt and pepper.
- Meanwhile, toast bread on one side under broiler. Spread untoasted side with butter and sprinkle with parmesan.
- Return to broiler until lightly toasted.
- Ladle soup into bowls and float toast.
Notes
If soup bowls are ovenproof, float bread and run under broiler to toast second side.
