Cream Of Broccoli Soup

Ingredients
- 2 medium bunches broccoli, cut up
- 2 medium potatoes, peeled and thinly sliced
- 4 Tablespoons butter
- 1 medium onion, sliced
- 4 Tablspoons flour
- 2 cups warm chicken broth
- 2 cups warm milk
- 1/2 cup warm heavy cream
- 2 teaspoons dried basil
- salt and pepper
- SET ASIDE 8 FLORETS, COOKED
Directions
- Cook broccoli and potatoes in salted water until tender.
- Heat butter in large saucepan, add onions and cook until transparent. Add flour and stir until blended.
- Cook 3-4 minutes then add broth and milk, stirring until smooth.
- Puree broccoli and potatoes until smooth. Gradually add half of the broth/milk mixture and puree again until smooth.
- Return mixture to saucepan.
- Add remaining milk/broth and stir well with wire whisk.
- Add cream gradually, stirring until a good constistency is achieved. Add salt, pepper and basil.
- Garnish with florets.
