Chicken and Sausage Jambalaya

Ingredients

  • 2 boneless chicken breast
  • 6 Andouille Sausage
  • 3/4 lb. yellow onion (about 1 1/2 onions) diced
  • 2 stalks celery
  • 3 cloves garlic, minced
  • 2 cans chicken stock
  • 3 1/2 cups white rice, uncooked (not instant)
  • Tony's Seasoning

Directions

  1. Make a chicken broth by boiling the chicken with 2 stalks of celery, 2 cans of chicken stock and 4 chicken stock cans of water.
  2. Shred the chicken and brown the sausage in a skillet over medium heat. Add the chicken for the last 5 minutes.
  3. Add the onion, garlic, chicken and sausage to the broth and bring to a boil.
  4. Add the 3 1/2 cups of uncooked white rice and simmer until rice is tender, about 45 minutes.
