Chicken and Sausage Jambalaya

Ingredients
- 2 boneless chicken breast
- 6 Andouille Sausage
- 3/4 lb. yellow onion (about 1 1/2 onions) diced
- 2 stalks celery
- 3 cloves garlic, minced
- 2 cans chicken stock
- 3 1/2 cups white rice, uncooked (not instant)
- Tony's Seasoning
Directions
- Make a chicken broth by boiling the chicken with 2 stalks of celery, 2 cans of chicken stock and 4 chicken stock cans of water.
- Shred the chicken and brown the sausage in a skillet over medium heat. Add the chicken for the last 5 minutes.
- Add the onion, garlic, chicken and sausage to the broth and bring to a boil.
- Add the 3 1/2 cups of uncooked white rice and simmer until rice is tender, about 45 minutes.
