Quiche Lorraine

A classic brunch favorite
Ingredients
- 1 9'' pie crust
- 12 slices bacon (about 1/2 lb.) crisply fried and crumbled
- 1 cup (4 oz.)shredded Swiss cheese
- 1/2 cup minced onion
- 4 eggs
- 2 cups light cream or whipping cream
- 3/4 teaspoon salt
- 1/4 teaspoon sugar
- 1/8 teaspoon cayenne red pepper
Directions
- Heat oven to 425ºF. Sprinkle bacon, cheese and onion in pastry lined pan.
- With a hand mixer, blend remaining ingredients; pour into pie pan and bake for 15 minutes.
- Reduce oven temperature to 300ºF. Bake pie 30 minutes longer or until knife inserted 1'' from edge comes out clean.
- Let pie stand 10 minutes before cutting.
