Hobo Casserole

Ingredients
- 6 oz. shredded cheddar cheese
- 3 cups hash brown potatoes, thawed
- 1 ham steak, diced
- 1/4 cup green onion, chopped
- 4 eggs, beaten
- 1 can evaporated milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Directions
- Preheat oven to 350ºF.
- In a large bowl, mix cheese, hash brown potatoes, green onion, salt and pepper. Spoon into a 9'X12'' glass baking pan, sprayed with a non-stick cooking spray.
- Mix eggs and evaporated milk together; pour over first 4 ingredients.
- Bake for approximately 60 minutes or until top is golden.
