Chicken and Sausage Gumbo

Ingredients

  • 2 Lb. Boneless Chicken Breast
  • 2 Lb. Andouille Sausage
  • ¾ Lb Yellow Onion (1 large onion), Diced
  • 2 Green Bell Peppers, Diced
  • 6 Stalks of Celery, 4 Diced, 2 Whole
  • 3 Cloves of Garlic, Minced
  • 1 Can of Chicken Stock
  • 1/2 Cup Flour or Gluten Free All Purpose Flour
  • 3 Bay leaves
  • 1 tsp Cumin
  • 1/2 tsp turmeric (optional)
  • Tony’s Seasoning

Directions

  1. You will need a skillet and a large (2+ gallon) pot. A 4qt pot for the stock is helpful if you don't want to transfer the stock to a bowl.
  2. Make a chicken broth by boiling the chicken with 2 stalks of celery, 3 bay leaves, 1 can of chicken stock and enough water to cover the chicken plus a little extra (about 6 cups total). Should be about 8 cups of liquid. Boil for 30 minutes. Remove the chicken for shredding and discard the celery and bay leaves - do not discard the liquid! This is the broth base. Transfer it to a large bowl or container to add into the pot later.
  3. Shred the chicken while browning the sausage (sliced, diced or crumbled, your preference) in a skillet over medium heat. Add the chicken for the last couple of minutes.
  4. Reserve the grease.
  5. Make a Roux – Mix the reserved sausage grease with enough canola or vegetable oil to make ½ Cup. Heat the oil in the large pot and add ½ cup of flour (for Gluten Free, use an all purpose GF flour mix) . Stir constantly until it turns a medium (milk chocolate) brown. This takes about 10 minutes.
  6. Add the onion, bell pepper, and remaining 4 stalks of celery to the roux and cook until softened.
  7. Add the garlic and cook for 1 minute.
  8. Add the broth then the meat and cumin (and optional turmeric) to the vegetables and roux . If needed, add more water or chicken broth. There should be enough liquid that everything moves freely when stirred. Simmer over low/medium heat for 2-6 hours (the longer the better!)
  9. Serve over Rice with Tony's seasoning.

Notes

Optional: Add Shrimp or Crawfish. A few dashes of turmeric are a healthy addition with a matching spicy flavor.
