Roasted Acorn Squash

Ingredients
- 4 acorn squash, halved lengthwise and seeded
- 2 tablespoons butter, melted
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Grated nutmeg
Directions
- Preheat oven to 425ºF. Spray a large rimmed baking sheet with nonstick spray.
- Put the squash, cut side up, on the baking sheet. Brush the flesh with the melted butter then sprinkle with salt pepper and nutmeg.
- Cover with foil and roast about 30 minutes. Uncover and roast until the flesh is lightly browned and very soft, about 10-15 minutes.2
