Pennsylvania Dutch Green Beans

Ingredients

  • 3 slices bacon, diced
  • 1 small onion, sliced
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1 can (16oz.) cut green beans
  • 1 tablespoon brown sugar
  • 1 tablespoon vinegar
  • 1 hard cooked egg, chopped

Directions

  1. Cook bacon until crisp and remove from skillet.
  2. Add onion to 1 tablespoon bacon drippings and cook until tender.
  3. Blend in cornstarch, salt and dry mustard.
  4. Drain beans, reserving 1/2 cup of the liquid.
  5. Stir in reserved liquid and cook, stirring constantly, until thickened and translucent.
  6. Blend in sugar and vinegar. Add beans and heat through.
  7. Top with bacon and chopped egg.
