Sweet-Sour Red Cabbage

Ingredients
- 1 medium head of red cabbage
- 2 tablespoons vinegar or lemon juice
- 4 slices bacon, diced
- 1/4 cup packed brown sugar
- 2 tablespoons flour
- 1/2 cup water
- 1/4 cup vinegar
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 small onion, sliced
Directions
- Remove outside leaves from cabbage.
- Wash cabbage and shred to measure 5 cups.
- In a saucepan, heat 1/2'' salted water and 2 tablespoons of vinegar to a boil. Add cabbage. Cover and heat to boiling, about 5 minutes or until crisp-tender. Drain.
- Fry bacon until crisp and drain. Pour off all but 1 tablespoon of bacon drippings. Stir brown sugar and flour into drippings in skillet.
- Add water, 1/4 cup vinegar, salt, pepper and onion. Cook, stirring frequently, until mixture thickens, about 5 minutes.
- Add bacon and sauce mixture to cabbage; stir together and heat through.
- OPTIONAL: Garnish with additional crisply fried diced bacon.
