Sweet-Sour Red Cabbage

Ingredients

  • 1 medium head of red cabbage
  • 2 tablespoons vinegar or lemon juice
  • 4 slices bacon, diced
  • 1/4 cup packed brown sugar
  • 2 tablespoons flour
  • 1/2 cup water
  • 1/4 cup vinegar
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 small onion, sliced

Directions

  1. Remove outside leaves from cabbage.
  2. Wash cabbage and shred to measure 5 cups.
  3. In a saucepan, heat 1/2'' salted water and 2 tablespoons of vinegar to a boil. Add cabbage. Cover and heat to boiling, about 5 minutes or until crisp-tender. Drain.
  4. Fry bacon until crisp and drain. Pour off all but 1 tablespoon of bacon drippings. Stir brown sugar and flour into drippings in skillet.
  5. Add water, 1/4 cup vinegar, salt, pepper and onion. Cook, stirring frequently, until mixture thickens, about 5 minutes.
  6. Add bacon and sauce mixture to cabbage; stir together and heat through.
  7. OPTIONAL: Garnish with additional crisply fried diced bacon.
