Sausage-Vegetable-Rice Skillet

Ingredients
- 1 lb. bulk pork sausage
- 3/4 cup rice
- 2 medium zucchini, cubed
- 1 large tomato, cubed or 1 cup drained diced tomato
- 1/2 cup onion, chopped
- 1 small clove garlic, crushed
- 3/4 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups hot water
Directions
- In a 10'' heavy skillet, brown sausage well, stirring to break up large chunks. Drain and discard all fat.
- Stir in rice and cook, stirring 2 minutes or until rice becomes opaque.
- Stir in remaining ingredients; bring to a boil; cover and simmer 20 minutes or until rice is tender and all liquid is absorbed. Stir to mix.
