Scallops with Lemon-Butter Sauce

Ingredients
- 1 lb. sea scallops
- 2 tablespoons flour
- 1/2 teaspoon salt, divided
- 1/4 teaspoon pepper, divided
- 1 tablespoon olive oil or cooking oil
- 2 tablespoons butter, divided
- 1 tablespoon fresh lemon juice
- 2 tablespoons finely chopped parsley
Directions
- Coat scallops in flour. Season with 1/4 teaspoon of salt and 1/8 teaspoon of pepper.
- Cook scallops in 1 tablespoon oil and 1 tablespoon of the butter in large skillet over medium high heat for 2 minutes per side.
- Remove scallops and add remaining butter, lemon juice, parsley, salt and pepper. Mix well.
- Heat on low and serve sauce over scallops.
