Shrimp and Mango Salsa Lettuce Boats

Lettuce leaves serve as a 'boat' to hold the salsa
Ingredients
- 1 lb. cooked shrimp, tails removed
- 6 Iceberg or Romaine lettuce leaves, washed and chilled
- 2 ripe mangoes, peeled and cubed
- 1 jalapeno pepper, cored, seeded and finely chopped
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- juice of 1 lime
- Sugar to taste
- Salt to taste
Directions
- For Salsa: gently mix mango, pepper, red onion, cilantro and lime juice in a medium glass bowl (not stainless steel)
- Taste for salt and sugar and adjust as needed.
- Cover and refrigerate for about 3 hours to allow flavors to blend.
- ASSEMBLY: When ready to serve, combine the shrimp with mango salsa and spoon into ''boats''.
Notes
Sliced Mango from the produce department of your local grocery store can be a good substitution as a time saver.
Garnish with sliced red onion, avocado or fresh cilantro leaves.
