Spaghetti with Peppers and Shrimp

A colorful pasta dish based on a classic meal from Southern France.
Ingredients
- 24 colossal uncooked shrimp, peeled and de-veined
- 1 lb. cooked spaghetti
- 1/4 cup extra virgin olive oil
- 1 teaspoon crushed red pepper flakes
- 1 clove garlic, minced
- 1/2 cup red onion, sliced into crescent shapes
- 1 red bell pepper, finely diced
- 1 green bell pepper, finely diced
- 1 yellow bell pepper, finely diced.
- Shaved or grated Parmesan or Reggiano cheese
Directions
- Cook shrimp in boiling water until opaque. about 3-5 minutes. Drain and set aside to cool.
- Cook the spaghetti according to package directions and toss with 2 tablespoons oil to coat. Set aside to cool at room temperature.
- In a large saute' pan, warm three tablespoons of oil over medium heat.
- Begin the saute' with crushed pepper flakes and garlic. Once the garlic is golden (about 1 minute), add red onion and stir until they become translucent.
- Add diced peppers and cook until soft. Add salt to taste.
- Add the cooked pasta and shrimp and gently toss until the pasta is coated and the shrimp is evenly distributed.
Notes
Top each plate with 1 whole shrimp, grated cheese, if desired, and fresh basil
