Bacon Wrapped Flank Steak

Ingredients
- 2 lbs. beef flank steak, scored*
- 1 clove garlic, halved
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 4-6 slices bacon, raw
- 1/2 cup flour
- 1 can (8oz.) tomato sauce
- 1/2 teaspoon salt
- 1 tablespoon fresh parsley, snipped
- 1/2 cup chopped onion
Directions
- Score and lightly pound the flank steak. Rub with garlic and sprinkle with the salt and pepper.
- Cut meat crosswise into 4-6 serving pieces.
- In a large skillet, cook bacon until barely crispy. Drain bacon on paper towels but keep 2 tablespoons of the drippings in the skillet.
- Place a slice of bacon on each piece of meat and roll up. Secure with a wooden toothpick.
- Coat rolls in flour and place in bacon drippings in the skillet, browning over medium heat. Brown all sides.
- Stir together the tomato sauce, salt, parsley and chopped onion. Pour over meat.
- Cover tightly and simmer about 60 minutes or until beef is tender.
- Place steak rolls onto a warm platter. Heat sauce to boiling, stirring constantly and pour over rolls.
Notes
*cut flank steak lightly in a crisscross pattern so it's pliable. Serve over your choice of rice, noodles or mashed potatoes.
