Sweet and Sour Pork

Ingredients
- 1 lb. boneless pork, cubed and boiled for 5 minutes.
- BATTER FOR PORK:
- 1/4 cup flour
- 1/3 cup cornstarch
- 1 teaspoon salt
- 1 tablespoon soy sauce
- 2 eggs
- SAUCE:
- 1 clove garlic, finely chopped
- 1/2 cup red wine vinegar
- 2 tablespoons ketsup
- 1 tablespoon soy sauce
- 1/2 cup water
- 2 tablespoons sweet pickle juice with a few bits of pickle
- 3/4 cup sugar
- 1 small can pineapple bits with juice
- 1 green bell pepper, cut into bite sized chunks
- 2 carrots, cleaned and sliced
- 1 tablespoon cornstarch
Directions
- Marinate pork in batter at least 30 minutes, stirring occasionally. Heat oil in a deep fryer to 400ºF. Fry pork until golden brown, about 1-2 minutes. Drain and keep warm.
- Fry garlic in 1 tablespoon oil. Add vinegar, ketsup, soy sauce, water, pickle and sugar.
- Blend cornstarch into pineapple juice (about 1/4 cup) and add to vinegar mixture. Cook and stir constantly until sauce is thick.
- Add peppers, carrots and pineapple bits and mix well.
- Let sauce rest 5 minutes.
Notes
Mix pork into sauce or serve separately. You can substitute chicken for the pork.
