Pork Green Chili

Ingredients
- 2 lbs. pork tenderloin, cut into 1'' cubes
- 1 1/2 cups chopped onions
- 3 cloves garlic, finely chopped
- 2 tablespoons vegetable oil
- 2 tablespoons flour
- 4 (4oz.) can diced green chilis
- 1 teaspoon oregano
- salt and cayenne pepper to taste
Directions
- In a large heavy skillet or Dutch oven, brown meat with onion and garlic. Cover with hot water and simmer about 1 hour, until pork is tender.
- Remove pork from liquid, reserving 3 cups.
- In a large saucepan, cook and stir oil and flour over low heat about 3 minutes. Stir in 3 cups of reserved cooking liquid, pork, chilies and oregano.
- Bring to a boil, reduce heat and simmer, uncovered, about 90 minutes, or until thickened. Season to taste with salt and pepper
