Spicy Chicken Fillet Sandwich

Ingredients
- 6-8 cups vegetable or canola oil
- 1/3 cup red hot pepper sauce
- 2/3 cup water
- 1 cup flour
- 1 teaspoon salt
- 4 teaspoons cayenne pepper
- 1 teaspoon freshly ground black pepper
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/8 teaspoon garlic powder
- 4 chicken breast fillets
- 4 hamburger buns
- Mayonnaise
- lettuce leaves and sliced tomatoes
Directions
- Preheat the oil in a deep fryer to 350ºF.
- Combine the pepper sauce and water in a small bowl.
- Combine the flour, salt, cayenne pepper, black pepper, onion power, paprika and garlic powder in another shallow bowl, like a pie plate.
- Pound each chicken fillet with a mallet until about 1/2'' thick. Trim each fillet to fit onto the bun.
- Working with one fillet at a time, coat each piece with the flour, then dip in the pepper sauce mix and dredge in the flour mixture again until the fillets are coated well.
- Fry the fillets for 8-12 minutes or until they are light brown and crispy. Remove the chicken and drain on paper towels.
- Prepare each bun by either grilling, toasting or in a hot skillet. Spread the mayo on the top portions of the buns, add lettuce, tomato and a chicken fillet.
