Cranberry Spinach Salad

Ingredients
- 2 cups packaged fresh baby spinach
- 1 tablespoon slivered almonds, toasted
- 1 tablespoon dried cranberries
- 1/2 oz. provolone or mozzarella cheese, shredded
- Dijon Orange Vinaigrette:
- 2 teaspoons orange juice
- 2 teaspoons white wine vinegar
- 2 teaspoons olive oil
- 1/4 teaspoon Dijon style mustard
Directions
- Divide spinach onto 2 salad plates. Top with almonds, cranberries and shredded cheese.
- Top with Dijon Orange Vinaigrette dressing:
- In a jar, combine orange juice, white wine vinegar, olive oil 1/4 teaspoon Dijon mustard and a pinch of salt. Cover jar and shake well. Serve over spinach salad.
