Cranberry Spinach Salad

Ingredients

  • 2 cups packaged fresh baby spinach
  • 1 tablespoon slivered almonds, toasted
  • 1 tablespoon dried cranberries
  • 1/2 oz. provolone or mozzarella cheese, shredded
  • Dijon Orange Vinaigrette:
  • 2 teaspoons orange juice
  • 2 teaspoons white wine vinegar
  • 2 teaspoons olive oil
  • 1/4 teaspoon Dijon style mustard

Directions

  1. Divide spinach onto 2 salad plates. Top with almonds, cranberries and shredded cheese.
  2. Top with Dijon Orange Vinaigrette dressing:
  3. In a jar, combine orange juice, white wine vinegar, olive oil 1/4 teaspoon Dijon mustard and a pinch of salt. Cover jar and shake well. Serve over spinach salad.
