Japanese Style Yakitori Chicken

Ingredients

  • 6 boneless, skinless chicken breasts
  • 1/2 cup soy sauce
  • 1/2 cup Mirin (sweet Japanese cooking wine) or Sake
  • 1 teaspoon finely chopped ginger root
  • 1 clove garlic, finely chopped
  • 2 tablespoons vegetable or canola oil
  • 2 cups water
  • 2 tablespoons sugar
  • 2 green onions, with green tops, cut diagonally into 1/4'' slices
  • 3 cups hot cooked rice

Directions

  1. Mix soy sauce, Mirin, ginger and garlic in a medium glass bowl. Place chicken in soy sauce mixture. Cover and refrigerate at least 1 hour.
  2. Drain chicken, reserving soy sauce mixture. Heat 2 tablespoons oil in 12'' skillet until hot. Cook chicken over medium heat until brown on both sides until done, about 15 minutes.
  3. Heat water, sugar and reserved soy sauce mixture to a boil in a 3 qt. saucepan; boil and stir about 2 minutes. Mix in green onions.
  4. Cut each chicken breast half into 6 diagonal slices; place over rice and spoon hot marinade over chicken.
