Japanese Style Yakitori Chicken

Ingredients
- 6 boneless, skinless chicken breasts
- 1/2 cup soy sauce
- 1/2 cup Mirin (sweet Japanese cooking wine) or Sake
- 1 teaspoon finely chopped ginger root
- 1 clove garlic, finely chopped
- 2 tablespoons vegetable or canola oil
- 2 cups water
- 2 tablespoons sugar
- 2 green onions, with green tops, cut diagonally into 1/4'' slices
- 3 cups hot cooked rice
Directions
- Mix soy sauce, Mirin, ginger and garlic in a medium glass bowl. Place chicken in soy sauce mixture. Cover and refrigerate at least 1 hour.
- Drain chicken, reserving soy sauce mixture. Heat 2 tablespoons oil in 12'' skillet until hot. Cook chicken over medium heat until brown on both sides until done, about 15 minutes.
- Heat water, sugar and reserved soy sauce mixture to a boil in a 3 qt. saucepan; boil and stir about 2 minutes. Mix in green onions.
- Cut each chicken breast half into 6 diagonal slices; place over rice and spoon hot marinade over chicken.
