Lemon Turkey Scallopini

Ingredients

  • 1 lb. turkey or chicken breast, boneless
  • 1/3 cup flour mixed with 1/2 teaspoon each salt and pepper
  • 2 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1/2 cup dry white wine
  • 3 tablespoons lemon juice
  • 2 tablespoons chopped parsley
  • 1 large clove garlic, crushed
  • Fresh parsley and thinly sliced lemon for garnish

Directions

  1. Flatten meat to 1/4'' thickness. In pie plate, coat meat n flour mixture. Shake off excess.
  2. In large skillet over medium high heat, melt one tablespoon of butter with oil. Add meat and cook in batches, about 3 minutes per side or until golden brown. Remove cutlets and keep warm.
  3. Add remaining butter, wine and lemon juice and stir. Cook until heated through scraping brown bits in pan.
  4. Stir in parsley and garlic. Pour over cutlets and garnish with parsley and lemon slices. Serve immediately.

Notes

You can make this dish with turkey, chicken or pork tenderloin.
