Chicken Salad

Ingredients

  • 1/2 lb. boneless, skinless chicken breast
  • 2 celery ribs, chopped
  • tomato slices
  • red onion slices
  • lettuce
  • mustard
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/8 teaspoon white pepper
  • 1 teaspoon lemon juice
  • 1 cup mayonnaise
  • 1 1/2-2 tablespoons granulated sugar
  • sliced bread

Directions

  1. Place chicken breasts on cutting board and cover with waxed paper. Pound the chicken breasts to a 1/2' thickness. Season both sides of the chicken with garlic and onion powder. Place the chicken in a saucepan and cover with water. Bring it to a boil and cover and let simmer until cooked, about 10 minutes. Don't overcook so it becomes rubbery. Remove the chicken and let it cool.
  2. Mix the chopped celery and the cooled chicken together. In another small bowl, blend mayo, sugar, pepper and lemon juice and whisk until well combined and the sugar is dissolved. Blend mayo mixture with the celery and chicken mixture. Build your sandwich with the lettuce, onion and tomato slices and enjoy.
