Red Bean Chili

Savory beef and bean crock pot chili
Ingredients
- 1 lb ground beef
- 2 cups (3 5.5 oz cans) tomato juice
- 15 oz can of tomato purée
- 15 oz can of crushed tomato
- 15 oz (1 can drained and rinsed) red beans
- 3/4 cup diced onion (yellow or white)
- 1 cup diced green bell pepper
- 1/2 cup diced celery
- 1/4 cup chili powder
- 1/2 tsp cumin
- 3/4 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp Tumeric (optional)
- 1/4 tsp black pepper
- 1/4 tsp oregano
- 1/4 tsp sugar
- 1/4 tsp cayenne pepper
Directions
- Brown ground beef in skillet or crock pot if you have a stove top setting.
- Add all other ingredients, stir and cook in crock pot on low for 4-8 hours. (Can be cooked all day but recommend at least 4 hours)
- Stir every 30-60 minutes
Notes
Optional: use 8oz each red beans and pinto beans
Add more cayenne for spicier chili
Can be cooked on stovetop over low/medium heat for 2-3 hours
Top with shredded cheddar cheese, crackers and hot sauce.
Great on tater tots and french fries too!
