Hasselback Potatoes

A Swedish specialty - potatoes are partially cut through and roasted to an extra crispy texture.
Ingredients
- 6 medium baking potatoes, scrubbed and peeled
- 1/4 cup butter, melted
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons dry bread crumbs
- Paprika
Directions
- Preheat oven to 375 degrees F. See ''Notes'' on how to slice potatoes. Place cut sides of potatoes up in a greased baking dish, 11''X7''X2''. Brush with the melted butter and sprinkle with the salt and pepper.
- Bake, brushing with butter once or twice for about 45 minutes. Mix cheese and breadcrumbs and sprinkle on top of potatoes. Sprinkle with paprika. Bake an additional 20-30 minutes until potatoes are tender.
Notes
Place each potato in the bowl of a large spoon. With a sharp knife, cut each potato into slices about 1/8'' thick. The bowl of the spoon will prevent the knife from cutting all the way through the potato.
