Mashed Sweet Potatoes with Walnuts

Ingredients
- 2 lbs. sweet potatoes, scrubbed and peeled
- 2 teaspoons salt
- 1/4 cup (1/2 stick) unsalted butter
- 1/2 cup whipping cream
- 1/2 cup finely chopped walnuts
- 1 1/2 cups miniature marshmallows
Directions
- Preheat oven to 375 degrees F. Spray a pie plate with a nonstick cooking spray and set aside.
- Place sweet potatoes in a large pot with enough salted water to cover by 1 inch. Bring to a boil, reduce heat to medium and cook until soft, about 20 minutes. Drain potatoes and set aside to cool. Drain potatoes and return to pot.
- Add butter to potatoes and mix on medium low with a hand mixer until blended. Add cream, a bit at a time, incorporating into the potatoes. Add walnuts and mix again.
- Spoon potatoes into the coated pie plate, top with marshmallows and bake 20 minutes, until marshmallows are lightly browned.
