Sweet and Spicy Sesame Chicken

Savory sesame slow cooker chicken with a kick.
Ingredients
- 1-1.5 lbs chicken breasts, boneless/skinless
- 2 cups chicken broth
- 2 cups water
- 4 tbsp raw honey
- 1 tsp sesame oil
- 2 tbsp rice vinegar
- 1 tsp Sriracha
- 4 tbsp soy sauce or tamari (tamari is a good gluten-free sub for soy sauce)
- 2 tbsp tomato paste
- 1 garlic clove- 1 heaping tsp minced
- 1/2 cup minced yellow onion
- 1 tsp minced jalapeno (or Serrano if preferred)
- 2 tbsp water
- 2 tsp corn starch starch
- 1-2 tbsp sesame seeds to taste
- scallions for garnish
Directions
- Add honey, sesame oil, soy sauce or tamari, tomato paste, Sriracha, and rice vinegar in a small bowl. Mix together.
- Finely dice the onion and jalepeno. Mince garlic clove. Add to bowl with other ingredients and stir.
- Mix the corn starch into 2 tbsp cold water. Stir until there are no clumps. Add mixture to sauce.
- Place the chicken breasts on the bottom of the crock pot. Pour in the chicken broth. Pour the sauce over the chicken, covering it completely.
- Cook on low for 6 hours.
- When done, shred the chicken in the crock pot and mix around with the sauce. Stir in the sesame seeds.
- Serve over rice topped with scallions.
