Roasted Red Potatoes with Bacon and Cheese

Ingredients
- 1/2 cup reduced fat Ranch dressing
- 1/2 cup reduced fat shredded cheddar cheese
- 1/4 cup bacon bits
- 2 lbs. small red potatoes, quartered
- 1 tablespoon chopped fresh parsley
- nonstick cooking spray
Directions
- Preheat oven to 350 degrees F. Mix dressing, cheese and bacon bits in a large bowl. Add potatoes and toss to coat.
- Pour into a lightly greased 13X9 baking dish and cover with foil.
- Bake 40 minutes. Remove foil and bake an additional 15 minutes or until potatoes are tender. Sprinkle with parsley.
