Ingredients

  • 3 cups light coconut milk
  • 3/4 cup fat free milk
  • 1/2 cup long grain white rice
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Directions

  1. Combine the coconut milk, fat free milk, rice and sugar in a medium saucepan. Bring to a simmer, cover and cook over low heat until the rice is tender and the mixture is creamy, about 60 minutes.
  2. Remove from the heat; stir in the vanilla and the cinnamon.
  3. Sprinkle a little cinnamon on top for color.
