Stovetop Rice Pudding

Ingredients

  • 2 cups whole milk, divided
  • 1 1/2 cups cooked rice
  • 1/3 cup sugar
  • 1 large egg, beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon

Directions

  1. Place 1 1/2 cups milk in a medium saucepan over medium heat. Warm milk until bubbles for around edges but don't let it boil.
  2. Add rice and sugar. Turn heat to medium low and let simmer 15-20 minutes.
  3. Stir in remaining milk, beaten egg and vanilla. Simmer 10 minutes, stirring constantly, until mixture is thickened
