Stovetop Rice Pudding

Ingredients
- 2 cups whole milk, divided
- 1 1/2 cups cooked rice
- 1/3 cup sugar
- 1 large egg, beaten
- 2 tablespoons butter
- 1 teaspoon vanilla
- 1/2 teaspoon ground cinnamon
Directions
- Place 1 1/2 cups milk in a medium saucepan over medium heat. Warm milk until bubbles for around edges but don't let it boil.
- Add rice and sugar. Turn heat to medium low and let simmer 15-20 minutes.
- Stir in remaining milk, beaten egg and vanilla. Simmer 10 minutes, stirring constantly, until mixture is thickened
