Iced Mini Chocolate Loaves

Ingredients

  • 1 3/4 cups flour
  • 1 1/4 cups white sugar
  • 1/2 cup unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons butter, melted
  • 2 tablespoons canola oil
  • 2 teaspoons vanilla
  • 1 oz. milk chocolate
  • 1 tablespoon half and half
  • 1/2 cup powdered sugar
  • 1 tablespoons macadamia nuts, chopped

Directions

  1. Preheat oven to 350 degrees F. Spray disposable mini loaf pans with nonstick spray. Dust with flour, shaking off excess.
  2. To make the loaves, whisk together the flour, sugar, cocoa, baking soda and salt in a large bowl. Whisk together the buttermilk, egg, butter, oil and vanilla in a medium bowl. Add the liquid mixture to the flour mixture, whisking until the batter is blended and smooth.
  3. Divide the batter evenly among the prepared pans. Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Let cool in the pans on a wire rack.
  4. To make the icing, combine the milk chocolate and half and half in a small microwavable bowl. Microwave at 50% power for 1 minute. Stir until chocolate is melted and the mixture is smooth.
  5. Invert the loaves onto a wire rack. Remove the pans and turn the loaves, right side up. Drizzle the icing over the tops of the loaves and sprinkle evenly with nuts. Let stand until the icing is set, about 20-30 minutes.
