High Altitude Banana Nut Bread

Dense and moist banana nut bread for high altitudes
Ingredients
- 1/3 cup Shortening
- 3/4 cup Granulated White Sugar
- 2 Eggs
- 1 3/4 cups Hungarian All Purpose High Altitude Flour
- 1 cup Crushed Pecans
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 tsp Baking Soda
- 3 small/medium Mashed Over Ripe Bananas
Directions
- You will need 1 large mixing bowl, 2 small mixing bowls and a 9 x 5 glass loaf pan
- Preheat oven to 350 deg. F
- In a medium bowl, sift together the flour, baking powder, salt and baking soda
- In another medium bowl mash or beat the bananas
- In the large bowl, cream together the shortening and sugar.
- Add the 2 eggs and beat well.
- Slowly add in the flour mixture until mixed.
- Add the bananas and mix well.
- Add the nuts and stir/beat until just mixed.
- Pour the mixture into the well greased loaf pan.
- Bake for 55 minutes.
- Allow to cool 30 minutes on the counter before removing from pan. Cool an additional 30 minutes on a rack or plate.
- Once cut, keep covered to preserve moistness.
