Coconut Macadamia Nut Cookies

Ingredients
- 1 cup butter, softened
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1 cup flaked coconut
- 1 jar ( 3 1/2 oz.) macadamias, coarsely chopped
Directions
- Preheat oven to 375 degrees F.
- Mix butter, sugars and egg until well blended. Stir in flour and baking soda (dough will be stiff). Stir in coconut and nuts.
- Drop dough by heaping teaspoonfuls about 2'' apartment onto ungreased cookie sheet. Bake until light and brown, 8-10 minutes. Centers will be soft.
- Cool slightly; remove from cookie sheet to wire rack.
