Chinese Almond Cookies

Ingredients
- 1 cup vegetable shortening
- 1 cup sugar
- 1 egg
- 3 tablespoons almond extract
- 1 tablespoon honey
- 3 cups flour
- 1 1/2 teaspoons baking soda
- 1 cup whole blanched almonds
Directions
- Preheat oven to 350 degrees F. Grease 2 large cookie sheets.
- In a large mixer bowl, cream shortening and sugar. Add egg, almond extract and honey and beat until light and fluffy; scraping sides of bowl occasionally. Combine flour and baking soda; gradually add to creamed mixture until well blended.
- To form cookies, break off pieces of dough about the size of a walnut and roll into a ball. Place on cookie sheet and flatten with a spatula into a thick cookie. Place almond in centers.
- Bake 7-8 minutes. Do not brown.
