Easy Brazilian Cheese Bread

Prep Time: 5 minutes || Cook Time: 20 minutes || Total: 25 Minutes
Servings: 8 || Yields: makes 16 mini sized breads

Ingredients

  • 1 egg, room temperature
  • 1/3 cup olive oil
  • 2/3 cup milk
  • 1 1/2 cups tapioca flour, minus 1 tablespoon
  • 1/2 cup packed grated cheddar cheese
  • 1 teaspoon salt

Directions

  1. Preheat oven to 400 degrees F. Grease a mini muffin tin.
  2. Put all of the ingredients into a blender and pulse until smooth. Scrape down the sides of the blender so that everything is well blended.
  3. Pour batter into the mini muffin tin until almost full.
  4. Bake at 400 degrees F 15-20 minutes until puffy and lightly browned. Remove from oven and let cool on a rack for a few minutes. Bread is very chewy.
