Easy Brazilian Cheese Bread

Servings: 8 || Yields: makes 16 mini sized breads
Ingredients
- 1 egg, room temperature
- 1/3 cup olive oil
- 2/3 cup milk
- 1 1/2 cups tapioca flour, minus 1 tablespoon
- 1/2 cup packed grated cheddar cheese
- 1 teaspoon salt
Directions
- Preheat oven to 400 degrees F. Grease a mini muffin tin.
- Put all of the ingredients into a blender and pulse until smooth. Scrape down the sides of the blender so that everything is well blended.
- Pour batter into the mini muffin tin until almost full.
- Bake at 400 degrees F 15-20 minutes until puffy and lightly browned. Remove from oven and let cool on a rack for a few minutes. Bread is very chewy.
