Lavash Crackers

Ingredients

  • 3 1/4 cups flour
  • 1 cup warm water
  • 1 tablespoon olive oil
  • 1 envelope yeast ( 2 1/4 teaspoons)
  • 1 teaspoon honey
  • 1 teaspoon salt

Directions

  1. In a large bowl, combine flour with water, yeast and salt. Mix until well combined.
  2. Gradually add the remaining flour, mixing well. Add in the oil and honey, adding more water if the dough is too dry, or more flour if the dough is too sticky. The dough should be very stiff.
  3. Knead the dough for approximately 10 minutes until a stiff firm ball has formed.
  4. Allow the dough to rise until doubled in size in a covered bowl. Time will vary depending on room temperature but should take approximately 2 hours.
  5. Knead the dough a second time and roll out until extremely thin.
  6. PREHEAT oven to 500 degrees F. Spread the dough over a baking sheet and bake for about 3 minutes until golden brown.

Notes

You can use a combination of white, wheat or semolina flours. A food processor can be used to knead the dough.
