Red Enchilada Sauce

Tasty tomato based spicy Mexican sauce great for enchiladas and chilaquiles
Ingredients
- 1 can diced tomatoes
- 1/2 medium white onion
- 2 cloves garlic
- 2-3 Jalepenos - sliced
- 1 cup chicken broth
- 1/4 cup Cholula hot sauce
- 1/2 tsp salt
- 1/2 tsp chili powder (optional)
- 1/4 tsp black pepper
- 2 tbsp olive oil
Directions
- Put the chicken broth and half an onion in a blender. Pulse to chop the onion.
- Add the tomatoes, garlic, jalepenos, hot sauce, salt, chili powder and pepper to the blender. Pulse or low speed blend until mostly smooth.
- Heat the olive oil in a medium pot over medium/high heat.
- Add the sauce to the heated pot and bring to a boil. Reduce heat to medium and simmer for 15 minutes, stirring every few minutes.
- Extra sauce can be frozen.
