Sweet Roasted Peppers

Great as a side or on top of lavash, crackers, or toast.

Ingredients

  • Peppers of your choice as follows:
  • Cubanelles - about 2 dozen
  • Banana Peppers - about 2 dozen
  • Bell Peppers - about 6
  • 3-4 tsp minced garlic
  • 1/2 cup olive oil
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350 deg F
  2. Remove stems and seeds from peppers
  3. Slice peppers into strips and place in single layer in large glass baking dish
  4. Drizzle olive oil over peppers
  5. Spoon minced garlic onto peppers spreading as much as possible
  6. Sprinkle with salt and black pepper
  7. Bake for 45 minutes, flip peppers and bake another 45 minutes to 1 hour. Until pepper are soft and edges start to brown.
  8. Note: Bell Peppers have a thicker skin and take longer. Cover with foil and bake for 45 minutes. Stir and recover, bake another 45 minutes. Remove foil then bake 30 minutes, stir and bake another 20-30 minutes until edges start to brown and peppers are soft.
  9. Store with drippings in sealed container in refrigerator for up to 3 days. Reheat in microwave to liquefy oil.
