Super easy Mexican breakfast of eggs, cheese, corn tortillas, and a spicy red sauce.
Ingredients
- 8 corn tortillas
- 4 eggs
- 1 1/2 cups shredded cheese
- 1 1/2 cups red enchilada sauce (or any other sauce or salsa or chili you like)
Directions
- Use a pizza cutter to slice tortillas into strips or squares about 1''.
- Deep fry for 1-2 minutes until crispy.
- Drain on paper towels.
- Divide fried tortillas onto 2 plates
- Top each portion with 3/4 cup shredded Mexican cheese and 3/4 cup sauce.
- Prepare 4 eggs over easy or fried and place 2 on top of each portion.
Notes
Try with this
red enchilada sauce or a
green enchilada sauce or green chili.
Replace eggs with shredded chicken for a non breakfast version.
