Brazilian Cheese Bread (Pao de Queijo)

Ingredients

  • 1/2 Cup Butter
  • 1/3 Cup Water
  • 1/3 Cup Milk
  • 1 teaspoon Salt
  • 2 Cups Tapioca Flour (aka Tapioca Starch)
  • 2 Eggs - Beaten
  • 2/3 Cup grated Fresh Parmesan Cheese
  • 1/4 cup cheddar or Mexican cheese (optional)

Directions

  1. Preheat oven to 375 deg F
  2. In a large saucepan, combine butter, water, milk and salt. Over high heat, melt butter and bring to a boil then immediately remove from heat.
  3. Stir in Tapioca Flour until smooth, you may want to knead by hand to form a dough (careful it may be hot)
  4. Set aside for 10 minutes
  5. Stir the eggs and cheese into the dough mixture, again kneading by hand if necessary to mix well.
  6. Drop heaping tablespoons into ungreased mini muffin pan.
  7. Bake for 25-30 minutes until the tops are golden brown.
  8. The outside will be crunchy and the centers will be very chewy. Serve warm immediately or covering them with plastic wrap or storing in an airtight container will allow the outsides to soften up if desired. Reheat in microwave for 15 seconds.

Notes

For a softer crust, store overnight in an air right container. Microwave 2-3 for 15 seconds to reheat. Outsides will be soft and chewy.
