Lemon Crusted Orange Roughy Fillets

Ingredients
- 2 Tablespoons light mayo
- 1/4 teaspoon grated lemon rind
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 (6oz.) Orange Roughy fish fillets
- non-stick cooking spray
- 1 teaspoon butter, melted
- 1/3 cup dry breadcrumbs
- lemon wedges (optional)
Directions
- Preheat oven to 450º
- Combine mayo, lemon rind, salt and pepper. Place fish fillets on a foil lined pan sprayed with non-stick coating. Spread mayo mixture evenly over fillets.
- Mix melted butter with breadcrumbs and sprinkle evenly over fish fillets.
- Bake for 10 minutes or until fish flakes easily.
