Pork Chops with Sweet Orange BBQ Sauce

Ingredients
- 1 teaspoon grated orange rind
- 1/3 cup fresh orange juice
- 3 Tablespoons ketchup
- 1 tablespoon sugar
- 1 tablespoon soy sauce
- 1 teaspoon bottled chopped ginger
- Cooking spray
- 4 (4oz. each) boneless center-cut loin chops
- 1/4 teaspoon black pepper
Directions
- Combine first 6 ingredients in a small bowl and set aside.
- Place a large non stick skillet coated with cooking spray over medium heat. Sprinkle both sides of pork with black pepper and add to pan. Cook 4 minutes per side.
- Remove pork from pan and keep warm.
- Add orange mixture to pan, scraping to loosen browned bits. Bring to a boil, reduce heat to medium and cook 2 minutes or until mixture is reduced to about 1/4 cup. Serve over pork.
