Italian Pork Tenderloin

Ingredients
- 1/2 lb. pork tenderloin, trimmed
- Non stick cooking spray
- 1/3 cup chopped onion (fresh or frozen)
- 1/4 teaspoon dried Italian seasoning
- 1/8 teaspoon salt
- 1/8 teaspoon fresh black pepper
- 3/4 Cup Marinara sauce
- 1/4 Cup (1oz.) shredded part-skim mozzarella cheese
Directions
- Cut pork crosswise into 6 pieces. Place each piece between 2 sheets of plastic wrap; flatten each piece to 1/2'' thickness using a meat mallet.
- Heat a medium sized nonstick skillet coated with cooking spray over medium to medium-high heat. Add pork and onion and cook 2 minutes on each side or until pork is lightly browned on both sides.
- Combine Italian seasoning, salt and pepper, sprinkle over pork and onion. Pour sauce over pork. Cover, reduce heat and simmer 3 minutes or until pork is done.
- Sprinkle with cheese; cover and cook 1 minute or until cheese melts.
