Southwest Roast Turkey

Ingredients
- FOR MARINADE:
- 1/3 cup lime juice
- 1/2 cup chili powder
- 1/2 cup dark brown sugar
- 2 tablespoons olive oil
- 2 cups water
- 1 teaspoon salt (optional)
- 1 whole turkey breast (3-4 lbs.)
Directions
- Combine all ingredients except for turkey breast. Place in a saucepan and bring to a boil over medium high heat. Remove from the saucepan and chill.
- Place the turkey breast in a large bowl and pour the marinade mixture over the breast. Refrigerate at least 4 hours.
- To cook the turkey, preheat oven to 375º. Place breast, skin side up, on a roasting pan and roast 35-40 minutes or until the internal temperature is 160º. Baste the turkey occasionally with reserved marinade.
- Remove turkey from oven and allow it to rest for 10 minutes.
- Slice and serve.
