Lemon Turkey Cutlets

Ingredients
- 3 tablespoons all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 6 (2oz. each) turkey breast cutlets, pounded thinly
- 2 teaspoons olive oil, divided
- 2 tablespoons fresh lemon juice
- Lemon slices (optional)
Directions
- Combine flour, salt and pepper in a shallow dish.
- Rinse turkey cutlets and pat dry then dredge in flour mixture, shaking off excess flour. Set aside.
- Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add 3 cutlets; cook 3 minutes or until lightly browned. Remove cutlets to a warm serving platter and repeat procedure with remaining oil and turkey.
- Reduce heat to medium low, add lemon juice to pan and stir.
- Sprinkle lemon sauce over cutlets and garnish with lemon slices, if desired.
