Sausage & Vegetable Strata

Ingredients
- 1 lb. mild sausage
- 6 slices bread, cut into 1/2'' cubes
- 1 cup cooked broccoli florets
- 1 cup cauliflower florets
- 1/2 cup cooked baby carrots
- 8 eggs
- 1 cup table cream, mixed with 1/2 cup water
- 1 teaspoon dry mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 oz. ( 1 1/2 cups) shredded Cheddar cheese
Directions
- Remove sausage from casing and brown in a large nonstick skillet. Transfer to paper towels to drain. Spray a 13X9 baking dish with nonstick cooking spray.
- Combine sausage, bread cubes and vegetables. Pat into an even layer in a prepared dish.
- Mix eggs, cream mixture, mustard, salt and pepper. Pour over vegetable and bread mixture. Sprinkle with cheese.
- Cover with plastic wrap and refrigerate at least 4 hours or overnight.
- Heat oven to 375º. Bake 40-50 minutes or until knife inserted near center comes out clean.
