Yellow Squash Casserole

Ingredients
- 2 sticks of butter
- 2 lbs. acorn squash
- 1 large carrot, grated
- 1 small onion, chopped
- 1 can cream of chicken soup
- 8 oz. sour cream
- 1 pkg. Pepperidge Farm Herb Dressing (not cubed)
Directions
- Preheat oven to 350º
- Peel squash.
- Boil squash onion and carrot until tender.
- In a medium sized bowl, melt butter and add dressing. Add soup and sour cream to carrot, onion and squash.
- Put a layer of dressing on bottom of a greased casserole dish. Add squash mixture and top with remaining crumbs.
- Bake at 350º about 20 minutes or until thoroughly heated.
