Baked Clams

Ingredients
- 1 can minced clams - save liquid
- 1/3 cup breadcrumbs
- 1 tablespoon oregano
- 1 tablespoon parsley
- 1 clove garlic, minced
- 3 tablespoons olive oil
- 1/2 - 3/4 cup chicken stock
- 3 tablespoons Parmesan cheese
- 1/4 teaspoon salt
Directions
- Pour clams, including liquid, into a medium sized skillet and warm. Mix all other ingredients into skillet. Mixture should be wet. Heat through.
- Fill shells and place them in a metal baking dish with 1/2 cup water on the bottom. Sprinkle with Paprika.
- Broil about 5 minutes. Mixture may bubble on the edges
Notes
If mixture is too dry, add more chicken stock. If mixture is too wet, add breadcrumbs, 1 tablespoon at a time. Use best judgement for texture.
