Sweet and Spicy Shrimp

Ingredients

  • 12 oz. fresh medium shrimp, cleaned and peeled, tails on
  • 1 large green, red or yellow pepper
  • 1 medium red onion
  • 6 large fresh mushrooms, cleaned and trimmed
  • 1/2 cup sesame oil
  • 3 tablespoons lemon juice
  • 2 tablespoons apricot preserves
  • 1/4 teaspoon Tabasco sauce
  • 1/2 teaspoon fresh ginger
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1/2 teaspoon red pepper flakes
  • 1 clove garlic
  • 1/4 teaspoon marjoram
  • 1 plantain or green banana
  • 8 oz. pineapple

Directions

  1. Cut pepper into 1'' squares. Drop them into boiling water and cook 3 minutes. Rinse with cold water to stop cooking.
  2. Peel onion, leaving root end intact. Cut into 6 lengthtwise wedges and blanch in the same manner as the pepper.
  3. MARINADE:
  4. Combine sesame oil, lemon juice, apricot preserves, Tabasco, ginger, honey, brown sugar, red pepper flakes, garlic and marjoram in a medium bowl.
  5. Place shrimp, blanched pepper, onion and mushrooms in a large, shallow glass baking dish (not metal) and pour marinade over them. Cover dish with plastic wrap and refrigerate 2 hours, stirring frequently.
  6. Preheat broiler or grill. Oil broiler pan to prevent sticking.
  7. Cut green banana into 1'' thick slices. Cut pineapple into small wedges. Remove pieces from marinade and reserve for later.
  8. Place shrimp, pepper, onion, mushrooms and fruit onto 6 skewers.
  9. Place 4''-6'' from heat and cook about 8-10 minutes, turning several times and basting with reserved marinade until shrimp are opaque and remaining pieces begin to brown
