Beef with Tomato Sauce

Ingredients
- 2 (1 lb. each) beef top round steaks, about 1/4'' thick
- water
- 5 medium tomatoes
- 1/4 cup canola or olive oil
- 2 tablespoons chopped green onions
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- 1 teaspoon basil
- 1 tablespoon cornstarch
Directions
- Pound each beef top round steak to 1/8'' thickness then cut steaks into 6''X 3'' pieces.
- In a large saucepan over high heat, heat 3'' of water to boiling; add tomatoes. Cook 30 seconds. Remove from boiling water and slip off skins. Chop tomatoes and slice the remaining 2 tomatoes. Set aside.
- In 12'' skillet over medium high heat, heat cooking oil. Brown steak, a few pieces at a time, until browned on both sides. Remove to warm platter as batches brown and keep warm.
- Reduce heat to medium. To same skillet, add chopped tomatoes, green onions, sugar, salt and basil.
- In a cup, mix cornstarch with 1/2 cup COLD water until smooth; gradually stir into tomato mixture and cook, stirring constantly, until mixture thickens and boils. Cook 1 minute.
- Add sliced tomatoes and heat through. Spoon tomato mixture over steaks.
